Upside-down cakes are hard to resist, because they’re so pretty, all luscious and colorful. Make them individual-sized, and they’re definitely impossible to pass – they’re just too adorable!
The idea here is to place a pineapple slice and a cherry at the bottom of each muffin tin, and then top it with cake batter only 3/4 of the way up; you don’t want them to grow too much, because they’re going to be served upside down.
