The students in her class were more than willing to take part in the experiment she designed. Jennifer ordered in all of the kit, resources, and equipment they needed in time for them to begin. First things first, they needed to head out to various locations across the Canadian city of London to purchase some samples of fish. They bought the fish from grocery stores, market places, and sushi restaurants.

The fish were bagged up into plastic pouches and put into the freezer, ready to be tested at a later date. The aim of the study was to find out what species of fish each fillet actually was. This would be done by sequencing the DNA taken from the samples. Jennifer knew full well that sometimes what we buy is not actually what we get, and she wanted to prove this.
